Ingredients
2 tbsp olive oil
1 clove garlic, crushed
2 medium onions, chopped
3 stalks celery, diced
3 medium potatoes, diced
32-oz box chicken broth or reduced sodium broth
1 small bunch fresh cilantro, rough chopped
Salt to taste
Pepper to taste
1/4 cup skim or 1% milk
lime
hot sauce |
Directions
Heat oil in a large saucepan over medium high heat. Add onion and celery. Saute until soft and translucent. Add garlic and saute for a few more minutes.
Add potatoes and chicken broth. Bring to boil and boil for 5-7 minutes or until potatoes are tender.
Reduce heat and add cilantro, cooking until cilantro is soft.
Transfer to a blender in small batches and blend until smooth or use imersion stick blender carefully to blend in pan.
Return to saucepan and cook covered for 5 minutes over medium heat until piping hot.
Add salt and pepper to taste.
Remove from heat and stir in milk.
Serve in colorful bowls with a sprig of cilantro as a garnish and hot sauce and lime on the side.
