Mexican Strawberry Water (Agua de Fresa)

Fruit waters, popular Mexican drinks, are made with crushed seasonal fruits. Try this strawberry recipe for a refreshing change of pace this summer!

Preparation time: Several hours.

Ingredients

4 cups strawberries
1 cup white sugar
8 cups cold water
1 lime
fresh mint

Directions

  1. Wash strawberries, remove leaves and cores and set aside to drain.
  2. Slice strawberries and mix with sugar and 1 cup of water in a bowl.
  3. Cover the bowl with plastic wrap and place in the refrigerator for 4 hours.
  4. Remove from the refrigerator and pour into a blender. Blend til smooth.
  5. Strain mixture using a sieve; discard the pulp and seeds.
  6. Add the remaining water to the pureed strawberries and mix well.
  7. Chill for several hours or pour over ice and serve immediately.
  8. Garnish with lime slices or mint leaves.

Alfredo Sauce

Ingredients

1/2 cup butter
2 cloves garlic, minced
2 cups heavy cream
1/2 cup grated Parmesan and/or Romano cheese
3/4 cups grated Mozzarella
3 T fresh parsley, minced
1/2 tsp salt
1/2 tsp
white pepper

Directions

  1. Melt butter in sauce pan over medium heat.
  2. Saute minced garlic in butter – do not brown.
  3. Add heavy cream, cook down for 8 minutes, stiring constantly.
  4. Add Parmesan and/or Romano cheeses and stir 1-2 minutes to melt.
  5. Add Mozzarella.
  6. Add parsley.
  7. Add salt and white pepper and serve over your favorite pasta or maybe a seasonal veggie like asparagus or broccoli!
